I actually made the recipe for these Oat Cups with Speculoos Cream for late fall. But I liked it so much that it has become a classic for the whole year and we simply replace the speculaas spice with tonka beans, for example.

I could honestly start with gingerbread & Co. already in September, but then the joy of it is gone long before Christmas, so I start slowly only from November. And this cream with speculoos is a successful start. Depending on the season, the cups can of course be prepared without the Christmas spices and are then welcome all year round.
The at first glance unusual combination can be combined, however, excellent and came out, as you can see, pretty little cupcakes. The cups consist mostly of healthy whole grain oatmeal and are formed into small baskets, which you can fill quite great. In my first attempt, I made the cups out of oatmeal, cocoa butter and honey and pressed them directly into the muffin tins, but unfortunately I couldn’t get them out whole. The 2nd attempt of oatmeal, bananas and honey worked wonderfully and the cups have quite easily released from the mold.

Preheat the oven to 175°C.
First mash the bananas or mash them very finely with a fork. Then add the honey, cinnamon and cocoa powder and mix well. Then mix well with oatmeal.
If desired, line a muffin tray or silicone mold with paper cups. Divide the oatmeal mixture evenly (about 1 large spoonful) among the muffin cups and shape into cups with a small spoon.
Bake the muffins for about 12 minutes, until they are dry on the outside. Then let cool thoroughly.
For the cream, beat the cream cheese with the powdered sugar and speculaas spice for about 1 minute with a mixer and pour the cream into a piping bag. Still chill the cream until the cups are cool.
Pipe the cream into the cool cups and decorate with fresh fruit.
Normally I add a great spoonful of almond butter to the oats while I am cooking them or when I want to replace the flavours, I just put it from the muffin cups before freezing. It is going to melt in the microwave and might be thrown through the oatmeal. Usually I choose fresh fruit but sometimes I use frozen or dried fruit too.
