So Fresh And So Clean – Fennel Tomato And White Bean Soup Recipe
Clean eating is a new trend that is growing every day. If you love clean eating recipes as much as I do then I think you will enjoy this recipe. Fresh ingredients are best and organic is the way to go! The texture of this soup is simply amazing, I also love how all the flavors compliment each other! I like to double this recipe and freeze the leftovers for a simple lunch that I can take to work. For this fennel, tomato and white bean soup recipe, the freshest ingredients will produce the best flavors.
2 fennel bulbs
2 cloves of garlic
1 tsp tomato paste
300 g chorizo sausage
500 ml vegetable broth
500 g chunky tomatoes
1 can(s) (425 ml) white bean seeds
5 stalk(s) of basil
- Wash and clean the fennel. Cut bulb in half and slice thinly. Peel and finely dice onions and garlic. Coarsely dice sausage and let it crisp in a pot without fat. Add onions, garlic, fennel and tomato paste and sauté.
- Deglaze with broth, bring to a boil and simmer for about 3 minutes.
- Add tomatoes and bring to a boil. Drain and rinse beans and add to tomatoes. Simmer soup gently for about 15 minutes. Wash basil, shake dry, pluck leaves from stems, set aside some leaves, cut remaining leaves into fine strips.
- Season soup with salt, pepper and basil strips. Serve soup in bowls and garnish with basil leaves.
